Another Italian classic, this pasta is basically a variant of Bologna’s meat sauce and the recipe remains the same to this day. Traditionally, this particular pasta is served with tagliatelle. Basic ingredients include olive oil or butter, coarse minced beef, finely diced carrots, celery, onions, and pancetta, peeled tomatoes, beef stock, whole milk, red wine, and salt and pepper. It is usually cooked for two to six hours on low heat.
